IQF Technology: The Power Behind Quality Frozen Ingredients

What is IQF in food processing? IQF, or Individual Quick Freezing, is a revolutionary food preservation method that dates back to the 1930s. It was pioneered by Clarence Birdseye in the United States. His breakthrough fundamentally changed the landscape of frozen foods and laid the foundation for the modern cold chain industry. This high-speed process prevents large ice crystals from forming and damaging the food’s cell walls. IQF is often compared to BQF, or Block Quick Freezing. BQF involves freezing a mass of ingredients together into a solid block. While effective for some applications, BQF can result in quality loss during thawing and is far less flexible for downstream use. For ingredients that need to maintain individual shape and consistency—such as diced mushrooms, garlic granules, peas, or corn kernels—IQF is the superior choice.

It’s important to note that IQF is much more than just “freezing fast.” The quality of the final product depends on many upstream and downstream variables, including the timing of harvest, cleanliness of raw materials, peeling and cutting precision, and handling procedures.
