How Our Dried Mushroom Raw Materials Are Grown
At ShunDi, the high quality of our dried mushrooms comes from our own cultivation base, where we manage the entire production process. From substrate preparation and multi-stage fermentation to mushroom growth and harvesting, every step is strictly controlled by our team. These fresh mushrooms then become the raw materials for our air-dried and freeze-dried mushroom products. Today, let’s take a closer look at how our mushrooms are cultivated from the very beginning.
1. Cultivation Substrate Preparation & Mixing
The production of dried mushroom raw materials starts with carefully prepared cultivation substrates, mainly straw, wheat straw, and chicken manure. These organic materials are thoroughly mixed, and gypsum is added to adjust pH and stabilize the compost structure, creating ideal conditions for fermentation.
2. Phase I Composting
During Phase I composting, the mixed substrate undergoes natural microbial decomposition and transformation. The original golden straw gradually turns dark brown due to biochemical and degradation reactions. This stage lasts approximately 13–14 days and is essential for building the nutritional foundation of the compost.

3. Phase II Pasteurization
Phase II fermentation is carried out in controlled tunnels for pasteurization, eliminating harmful microorganisms and stabilizing the substrate. The process includes pre-heating (around 45°C), heating, pasteurization (57–59°C), cooling, and conditioning (around 47°C). This stage operates across 31 tunnels and lasts 5–7 days.

4. Phase III Spawning
During Phase III, mushroom spawn is directly inoculated into the substrate inside fermentation tunnels, eliminating the need for separate spawning in mushroom houses. This stage lasts 16–22 days, allowing mycelium to fully colonize and spread uniformly.

5. Substrate Transportation
After fermentation, the conditioned substrate is transported under strict temperature control to the growing room. During transportation, the substrate temperature must remain below 15°C to maintain mycelium activity and stability.

6. Mushroom Growth Stage
Once the substrate enters the growing room, mushrooms grow under strictly controlled temperature and humidity conditions, forming mature raw material suitable for dried mushroom production.

7. Harvesting & Drying Process
Mature mushrooms are carefully hand-harvested and processed through air-drying or freeze-drying methods to preserve flavor, nutrition, and structural integrity.
