Hot air-drying, by contrast, removes moisture by circulating heated air. The process is relatively simple, involves lower equipment costs, and allows for high throughput. However, elevated temperatures accelerate the oxidation and degradation of nutrients, resulting in darker coloration, pronounced shrinkage, and a firmer texture after rehydration. Slices represent the largest-volume specification of dried portobello mushrooms in the food industry.
