7 Major Cultivated Edible Mushroom Varieties in the Industry

Cultivated edible mushrooms are mainly divided into wood-decaying fungi and straw-decaying fungi. Wood-decaying fungi grow primarily on wood or woody materials such as sawdust. Examples include shiitake mushrooms, wood ear mushrooms, shimeji mushrooms, enoki mushrooms, seafood mushrooms, crab-flavored mushrooms, white jade mushrooms, and maitake mushrooms. These species obtain nutrients by decomposing lignin and cellulose. Their growth rate is relatively moderate, but they are highly valued for their unique flavors and strong consumer appeal.

Straw-decaying fungi use agricultural residues such as rice straw and wheat straw as their main nutrient sources. Typical examples include button mushrooms, brown mushrooms, and straw mushrooms. These fungi grow quickly and yield high production, making them an important segment of the edible mushroom industry.

1. Button Mushroom (Agaricus bisporus)

The button mushroom (Agaricus bisporus), also known as the white mushroom, changes appearance during growth stages. When immature, it is white and hemispherical (white mushroom). As it matures, the cap opens and turns brown, known as the “brown mushroom.” Fully mature mushrooms with caps over 10 cm in diameter are called Portobello mushrooms.

Button mushrooms belong to straw-decaying fungi and are cultivated on composted substrates such as horse manure and wheat straw. They are widely cultivated around the world and known for their excellent taste. Their protein content can reach up to 42% (dry weight), and they are rich in selenium and ergosterol. Today, they are fully domesticated and produced in large-scale industrial farms.

2.  Straw mushroom (Volvariella volvacea)

Straw mushroom is also a type of straw-decaying fungus, similar to button mushrooms. It grows on cellulose-rich substrates such as rice straw, cotton waste, and discarded cotton materials. It is one of the few mushrooms suitable for high-temperature cultivation.

Its mycelium grows at 28–32°C, and fruiting also requires 28–32°C; it rarely forms fruiting bodies below 20°C. It also requires high humidity (85%–95%). Fresh straw mushrooms contain about 90% water. Protein content is relatively high (around 30% in dried form). They are also among the few mushrooms rich in vitamin C (about 10–20 mg per 100g fresh weight). In addition, they contain high levels of free amino acids such as glutamic acid and aspartic acid, giving them a strong umami flavor.

3. Shiitake Mushroom (Lentinula edodes)

Shiitake mushrooms originate from China and are the second most cultivated mushroom in the world, with over 800 years of cultivation history. They are wood-decaying fungi traditionally grown on hardwood logs such as oak or chestnut, with a cultivation cycle of 6–12 months. Modern production mainly uses sawdust bags, reducing the cycle to 2–3 months.

Shiitake caps are 3–10 cm in diameter, ranging from light brown to dark brown, often with white cracks. Gills are white, dense, and fine. Shiitake mushrooms are rich in polysaccharides, ergosterol (which converts to vitamin D2 after sun exposure), and guanylic acid, a key umami compound. Their flavor becomes even more intense when dried.

4. King Oyster Mushroom (Pleurotus eryngii)

King oyster mushrooms belong to the Pleurotus genus in the Pleurotaceae family. Fruiting bodies may grow singly or in clusters. The cap is initially hemispherical or shell-shaped, smooth, and light yellow to off-white, often covered with fine brown scales or spots. As it matures, the cap flattens and turns light brown to yellowish brown. The flesh is firm, white to cream-colored.

King oyster mushrooms are high in dietary fiber and potassium, providing strong satiety and supporting digestive health. However, they are relatively low in protein and contain almost no vitamin D.

5. Oyster Mushroom (Pleurotus ostreatus)

Oyster mushroom (Pleurotus ostreatus) belongs to the Pleurotaceae family. Fruiting bodies grow in clusters with overlapping, oyster-shaped caps that are fan-shaped or irregular, funnel-shaped. The texture is tender and smooth, easily absorbing sauces, and it has a mild seafood or almond-like aroma.

Oyster mushrooms are cost-effective, widely available, and nutritionally balanced. Although not as specialized in protein or fiber as some other mushrooms, they are affordable, accessible year-round, and widely consumed.

6.  Tea Tree Mushroom (Agrocybe aegerita)

Tea tree mushroom (Agrocybe aegerita) is a wood-decaying fungus originally growing on tea trees and other hardwoods, now widely cultivated. It has small caps and long slender stems, ranging in color from light to dark brown with surface cracks. Young caps are hemispherical, becoming flat as they mature.
It has a crisp, chewy texture with a mild nutty aroma, which becomes stronger after drying. Tea tree mushrooms are high in protein, potassium, and dietary fiber and are particularly notable for their zinc and selenium content.

7. Enoki Mushroom (Flammulina velutipes)

The enoki mushrooms are one of the most widely cultivated mushrooms. In nature, it grows on hardwood stumps during winter and spring. Cultivated enoki mushrooms are typically pure white, with tiny spherical caps (0.5–1.5 cm) and long, slender stems (3–8 cm).

The surface has a natural mucilage, giving a smooth texture after cooking. Enoki mushrooms are very low in calories and high in dietary fiber. They contain compounds such as flammulin and chitin, which support gut health and immune regulation. Due to their indigestible fiber structure, they are often known for promoting intestinal movement.

The Benefits of Cultivated Mushrooms

The main advantage of farm-grown mushrooms is that they are consistent and safe. Unlike wild mushrooms, which come with the risk of poisoning, cultivated varieties are grown under controlled conditions. By using tested spores and managing the growing environment, the risk of toxins is essentially eliminated. Additionally, cultivation isn't limited by the seasons, meaning a steady supply is available all year round. These mushrooms are also uniform in size and much cleaner, saving you the hassle of scrubbing away dirt or dealing with insect damage.

When it comes to dried mushrooms, the benefit isn't just a longer shelf life—it’s a major boost in flavor. During the drying process, enzymes break down certain compounds into guanylic acid, which creates a concentrated "umami" taste that is often several times stronger than in fresh mushrooms. Dried mushrooms are also much easier to store and transport; you can just soak them whenever they’re needed. Because they don't spoil or turn sour as quickly as fresh produce, they are a much more practical choice for large-scale food production.
