Purple Potato Powder

Purple potato (also called purple sweet potato or purple yam) is a root vegetable with naturally vibrant purple flesh. The purple color comes from anthocyanins, a natural antioxidant also found in blueberries and blackberries. Drum drying is a food dehydration process where a purple potato puree is spread thinly on the surface of heated rotating drums. The thin layer of puree quickly dries into a film and is then scraped off into powder. The resulting powder has a fine, consistent texture and retains much of the flavor, color, and nutrients of fresh purple potato. It is easy to rehydrate, convenient for instant soups, bakery, baby food, beverages, snack coatings, and functional foods.
